Interesting article..

I've come across the "Wooly Pigs" before several times in my web surfing.

About the age of the pigs at slaughter. It says they must go a year or more in order to ensure proper marbling.. Now.. as our breed also is reported to have good marbleing, does anyone know if the RW's need "more age" on them then your typical production hog in order to get properly marbled?
