Boar Taint

Some older boars do have the taste of a strong flavor in their meat, but not all boars do. I have found the best to get that strong flavor out is to soak the meat in quarters in ice water for at least one day. The ice water will draw the excess blood out of the meat which will get rid of the majority of the strong flavor, but still leave a good flavor. Boars over 8 years old the texture of the meat gets tough, and soaking in the water helps to soften it, but at that age it is best to make it into ground pork.
