About the blogger: This blog was created and is maintained by Eric Karlins with the love, support, editing, and sometimes photography of his lovely wife Melanie. Eric has no formal culinary training, but food and cooking give him great joy. He is also a supporter of local farms, sustainable agriculture, heritage breeds of plants and animals, and humane treatment of farm animals. Eric is currently living in the Washington DC area.
About this site: In addition to the blog posts this site provides a list of farm reviews. Of note is that every ingredient in the recipe posts are linked to a farm page, which gives information about where this ingredient can be purchased. The farm pages also give a review of the farming practices to help consumers select food that supports their beliefs, be it animal welfare or eating locally. |

Hi Mary. We raise Red Wattles (love them) and have been successful selling to the restaurants in Chicago. We deliver them whole or cut in half and the chefs take all the organs, head and one even takes the blood to make sausage. !
